Quick and easy powdered Brownie Cookies are made from a brownie mix. They have crispy edges, but are fudgy in the middle, just like regular brownies.

This recipe is inspired by cookies we find at Costco around the holidays. They come in a container with several other cookies, but these always stand out to us. I really wanted to figure out a similar cookie, so we could have them more than just around the holidays. The brownie mix I'm using is also from Costco, Ghiradelli Triple Chocolate. My husband grabs this huge box off of the shelf when he knows we are running low. He says that flowers don't work like chocolate does, especially if he does the baking of the brownies too.

Top Tips
- These cookies are very thick, like a usual brownie mix.
- You want them to be “undercooked” for that fudgy brownie texture. They’ll set as they cool.
- Use a small to medium cookie scoop to get more uniform cookies.
- I added powdered sugar before baking on one batch of cookies and after baking for a second batch. You can do either way or use no powdered sugar at all.
- If you use a medium cookie scoop, you will get about 2 dozen cookies
- I have tried vegetable oil and canola oil and both work well.
- You can add more chocolate chips, or even peanut butter chips, white chocolate chips.
- Store in an airtight container or ziplock bag for 3-5 days. If they last that long!
How to make Brownie Cookies with Brownie mix
- Preheat oven to 350 degrees. Prepare cookie pans with parchment paper, silicone mat, or cooking spray.
- In a large bowl, mix together the brownie mix, eggs, oil and flour.
- The batter will be thick.
- Fold in walnuts and chocolate chips.
- Scoop batter with a cookie scoop and roll in powdered sugar.
- Place cookie balls on prepared pans, about 2 inches apart. Cook 9-12 minutes or until just slightly undercooked. Remove from oven and allow them to finish cooking on baking pan. Remove from pan, allow to cool on wire rack.
- You can dip cooled cookies in powdered sugar. I have also dipped the cookies before and after baking to give an extra coat of powdered sugar. Or don't dip them at all, if you prefer. Enjoy!
