  2. In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat. Add diced onion to the skillet with the cooked meat. Cook for 2-3 minutes until the onions are translucent. Season the meat with salt and pepper.

  4. Stir in ½ cup of sour cream.

  6. In a large bowl, combine two boxes of Jiffy mix, can of cream corn, 1 egg, ¼ cup oil, ½ cup sour cream, and ⅓ cup milk.

  • 1 can (4 oz) green chiles
  • 1 can (9 oz) red enchilada sauce
  • 1 medium onion, diced
  • 1 oz taco seasoning
  • ½ cup sour cream
  • 2 cups cheddar cheese, shredded

Cornbread Topping

  • 2 boxes Jiffy Corn Muffin Mix
  • 1 can (14.75 oz) cream corn
  • 1 egg
  • ½ cup sour cream
  • ¼ cup canola or vegetable oil
  • ⅓ cup milk

Instructions
 

  • Preheat your oven to 375°F. Prepare a 9x13-inch baking dish with nonstick spray and set aside.
