This traditional, delicious Easy Mixed Berry Cobbler combines sweet, juicy berries with a buttery, rich biscuit topping. This is best with fresh berries, but if fresh berries aren't available, you may use frozen berries and still make this cobbler. I love it with vanilla ice cream on top.

My husband and I each have fond memories of picking blackberries as children. It was fun to just pick and eat them or gather them up to take home. I remember those thorns well also! We have a few blackberry bushes growing where we currently live. My husband said he picked a berry and ate it the other day while he was mowing. Although this cobbler has more than just blackberries because we like the mix of berries. Blackberries just have nice memories for us. Let us know how you like the cobbler!

Berry Ingredients

  • fresh or frozen berries (blackberries, blueberries, raspberries, or chopped strawberries)
  • granulated sugar
  • lemon juice
  • cornstarch

FAQs

What is mixed berry cobbler?

Mixed berry cobbler is a dessert consisting of a mixture of berries baked with a biscuit-like or cake-like topping. The berries become juicy and sweet as they cook, creating a delicious contrast with the slightly crunchy and soft topping.

Can I make mixed berry cobbler ahead of time?

You can prepare the berry filling and cobbler topping separately and refrigerate them. Assemble and bake just before serving for the best texture. Alternatively, you can bake the cobbler and reheat it before serving.

What should I do if the berry filling is too watery?

If the filling seems too watery after baking, let the cobbler cool for a bit to allow the juices to thicken. You can also add an extra tablespoon of cornstarch to the berry mixture before baking.

Can I make individual servings of mixed berry cobbler?

Yes, you can divide the berry mixture and topping into individual ramekins or small baking dishes. Bake them at the same temperature, but reduce the baking time to about 25-30 minutes, or until the topping is golden and the filling is bubbly.

Top Tips

  • No buttermilk? Substitute the buttermilk in the recipe with whole milk. Or mix 1 tablespoon of vinegar or lemon juice to 1 cup of milk. Let sit for 5-10 minutes.
  • You can use fresh or frozen berries. Both are equally delicious!
  • No need to thaw frozen berries! Toss them in right from the bag.
  • You can use any combination of berries you would like. I usually use 3 cups of blackberries, 3 cups of blueberries, 2 cups of raspberries. Or 8 cups of frozen berry medley.
  • Store the cobbler once cooled by covering it tightly and placing in the refrigerator for up to 4 days.

How to make Mixed Berry Cobbler

  1. Preheat oven to 375 degrees. Spray a 9x13" baking dish with nonstick spray.
  2. Place berries in a large bowl and gently mix with granulated sugar, lemon juice, cornstarch and vanilla extract. Set aside for about 10 minutes.

  3. Gather the topping ingredients.

  4. In a medium bowl, whisk flour, granulated sugar, brown sugar, baking powder and salt.

  5. Using a pastry cutter or two forks, cut the butter into the flour mixture until it is in pea-sized crumbs.

  6. Slowly pour cold buttermilk into the flour mixture, stirring to evenly combine.

  7. Place the berries into the prepared baking dish.

  8. Take small handfuls of dough and flatten it out, then place over the top of the berries. Cover them as much as possible.

  9. Brush the top of the dough with 1 tablespoon of buttermilk.

  10. Sprinkle a tablespoon of granulated sugar over the top of the buttermilk.

  11. Bake in the preheated oven for 45-55 minutes or until golden brown and toothpick inserted into the dough comes out clean. Cool 5-10 minutes before serving. Scoop, place ice cream or whipped cream on top and enjoy!

Berry Ingredients

  • 8 cups fresh or frozen berries (blackberries, blueberries, raspberries, or chopped strawberries)
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Topping

  • 1 ½ cups all purpose flour
  • ⅓ cup granulated sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter
  • ½ cup buttermilk
  • 1 tablespoon buttermilk, 1 tablespoon sugar, to place on top

Instructions
