It was so disappointing and I decided to figure out this cookie to make them delicious and I did! The cookies are soft and chewy, plus the fun caramel candy inside. How to make Cookies with Rolo Candy
- Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper or silicone baking mat.
- In a medium bowl, whisk all purpose flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl or stand mixer, cream softened butter, brown sugar, and granulated sugar until smooth, about 3 minutes.
- Add eggs and vanilla extract, mixing until well combined.
- Add dry ingredients to the wet ingredients and mix until just combined, no dry flour.
- Scoop cookie dough into tablespoon sized dough balls. Place 1 Rolo candy into the center of the dough.
- Wrap the dough around the Rolo. Be sure to cover the entire candy, then roll into a ball.
- Place ½ cup of granulated sugar into a small bowl. Roll each cookie ball into the sugar.
- Place onto prepared baking sheets. Bake 8-10 minutes. Do not overbake.
- Remove from oven, cool on baking sheets about 5 minutes, then remove to cooling racks. Enjoy!
