Chocolate Rolo Cookies will get attention at your home or at a cookie exchange. I made these cookies years ago for a cookie exchange and the caramel candy leaked out, then hardened. It was so disappointing and I decided to figure out this cookie to make them delicious and I did! The cookies are soft and chewy, plus the fun caramel candy inside. Kids will love to help by pressing the candies into each of the cookies and rolling the dough. Give them a try and let us know what you think in the comments!

What are Rolo Cookies?

Rolo Cookies are delicious chocolate cookies with a surprise caramel center, created by placing a Rolo candy inside the dough before baking. The result is a soft, chewy cookie with a gooey caramel filling.

How do I prevent the Rolo candies from leaking?

To prevent the Rolo candies from leaking while baking, make sure to completely encase them in cookie dough. Ensure there are no cracks or openings where the caramel can ooze out during baking.

Can I freeze Rolo Cookies?

Yes! You can also freeze them for longer storage by placing them in a freezer-safe container or zip-top bag for up to 3 months.

Top Tips

  • Take a heaping tablespoon of cookie dough, form it into a ball, and then press it flat. Place a Rolo in the center, then wrap the dough around it.
  • While baking, the Rolo will melt, and the more dough there is underneath, the less likely it is to leak out of the bottom.
  • To store, place in an airtight container up to 5 days. Add a slice of bread to the cookie container to increase the shelf life. Replace the bread as needed (it will get stale as it helps keep your cookies fresh).

How to make Cookies with Rolo Candy

  1. Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper or silicone baking mat.
  2. In a medium bowl, whisk all purpose flour, cocoa powder, baking soda, and salt. Set aside.

  3. In a large bowl or stand mixer, cream softened butter, brown sugar, and granulated sugar until smooth, about 3 minutes.

  4. Add eggs and vanilla extract, mixing until well combined.

  5. Add dry ingredients to the wet ingredients and mix until just combined, no dry flour.

  6. Scoop cookie dough into tablespoon sized dough balls. Place 1 Rolo candy into the center of the dough.

  7. Wrap the dough around the Rolo. Be sure to cover the entire candy, then roll into a ball.

  8. Place ½ cup of granulated sugar into a small bowl. Roll each cookie ball into the sugar.

  9. Place onto prepared baking sheets. Bake 8-10 minutes. Do not overbake.

  10. Remove from oven, cool on baking sheets about 5 minutes, then remove to cooling racks. Enjoy!
