Jello Poke Cake is a retro dessert that I remember my mom making for family parties and everybody just ate it up. It is such a light and flavorful cake but so simple and fun to make. Your kids will find it fun to help from poking the cake to spreading on the whipped topping. Take this cake to parties, family gatherings or make it for a BBQ and watch eaten up in no time.

Can I freeze a Jello poke cake?

It’s not recommended to freeze a Jello poke cake, as the texture of the Jello and whipped topping can change when thawed. The cake itself may also become soggy.

Why is my Jello not setting properly in the cake?

Ensure that you use the correct ratio of boiling and cold water as directed. Also, make sure the cake has enough time to chill in the refrigerator for the Jello to set completely.

Top Tips

  • You can use different flavors of jello, such as raspberry or cherry but we liked strawberry this time.
  • White cake mix is going to pair best when using fruity types of Jello.

  • Make sure your cake is completely cool before adding whipped topping to it, or it will melt.
  • Because the cake has Jello, keep it in the refrigerator for 3-5 days, tightly covered.
  • To make the "pokes" in the cake you can use a fork, toothpick, or for larger holes-use the end of a wooden spoon.

How to make Jello Poke Cake

  1. Make box cake mix, according to instructions on the back of the box. Cool the cake for at least 15 minutes, then poke holes in it (using toothpick, fork, or end of a wooden spoon), about every ½ inch.

  2. Next, make Jell-O, according to the box directions with hot and cold water.

  3. Pour or spoon jello slowly over the top of your cake, making sure to cover it.

  4. Chill for 3-4 hours to let the cake set, then spread with whipped topping and any fruit, if desired. Keep in refrigerator to chill. Enjoy!

  • 1 cup hot, boiling water
  • 1 cup cold water
  • 1 tub Whipped topping (Cool Whip)

Instructions
 

  • Make box cake mix, according to instructions on the back of the box.
