Apple Dapple Cake

Apple Dapple Cake  has a ton of apple chunks along with a buttery, brown sugar glaze on top. It is a great  anytime dessert!

Ingredients:

APPLE CAKE – 4 cups apples, peeled and diced (about 1 3/4 pounds) – 1 cup granulated sugar – 1 cup brown sugar, packed – 1 cup walnuts or pecans – 1 cup canola or vegetable oil – 1/2 cup applesauce – 3 eggs – 2 tsp vanilla extract – 3 cups all purpose flour – 1 tsp baking soda – 1/2 tsp salt – 1 tsp ground cinnamon

Ingredients:

BROWN SUGAR GLAZE – 1/3 cup granulated sugar – 1/4 cup brown sugar, packed – 1/4 cup (half of a stick) unsalted butter – 1/4 cup heavy cream or milk – 1/2 tsp vanilla extract

Preheat oven to 350 degrees. Prepare a 9×13″ baking pan with nonstick spray.

In a medium bowl, sift or whisk flour, baking soda, salt and cinnamon. Set aside.

In a large bowl or stand mixer, combine oil, granulated sugar, brown sugar and applesauce until combined.

Add eggs, one at a time and mix well after each addition, then add vanilla extract. Scrape down sides as needed.

Fold nuts into the batter.

Mix dry ingredients to the wet ingredients on low speed.

Spread batter into prepared baking dish. Bake 45-55 minutes or until toothpick inserted in the middle comes out clean.

Next, gently fold the peeled and diced apples into the mix.

When cake comes out of the oven, use a toothpick or wooden skewer and poke holes all over the cake while it is still hot.

Gather ingredients for the sugar glaze.

Bring glaze to a boil and continuously stir for one minute.

Place glaze ingredients into a small saucepan.

Remove glaze from heat and pour over the top of the hot cake. Serve hot, cold or with ice cream on top. Enjoy!
