Make the filling. In a medium saucepan, combine diced apples, granulated sugar, 1/2 tsp ground cinnamon, water, and cornstarch. Heat over medium heat for 5-6 minutes, or until apple soften and filling thickens. Remove from stove and cool. In a small bowl, mix 1/2 cup brown sugar with 1/2 tsp of ground cinnamon.

Preheat oven to 350°F and spray a 9x13" baking pan with nonstick spray. In a large bowl or stand mixer, combine 1/3 cup butter and granulated sugar, until creamy (about 2-3 minutes). Add eggs, vanilla extract, and eggs, mixing until well combined.

In a medium or large bowl whisk dry ingredients (flour, baking powder, baking soda, salt, 1 tsp ground cinnamon). Add sour cream and dry ingredients to wet ingredients. Combine until just combined - do not overmix.

Cover with the remaining batter and the other 1/3 of the brown sugar and cinnamon mix. Bake 35-45 minutes or until a toothpick in the center comes out clean.

When the cake is almost done, gather the glaze ingredients. Mix powdered sugar, vanilla, and milk in a small or medium bowl, until smooth.

While cake is hot, poke about 30 holes in it. Pour the sweet glaze over the hot cake.

Let cake cool for about 20 minutes for the glaze to set. Serve warm and enjoy!
