Preheat your oven to 350°F (175°C). Prepare cookie sheets.In a large bowl or bowl of a stand mixer bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs and vanilla extract.Whisk flour, baking soda, baking powder, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients.Gently fold in the chopped Cadbury Mini Egg candies, white chocolate chips, and chocolate chips.
Drop rounded tablespoons of cookie dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Place extra mini eggs on top of the cookies, if desired.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Remove from the oven and allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Enjoy!
