Best  Mexican  Wedding Cookies

Mexican Wedding Cookies only need six ingredients for these easy, melt in your mouth cookies. These little snowballs are a wonderful addition to your collection of  holiday cookies.

These melt in your mouth cookies are known as:  Mexican Wedding Cookies,  Russian tea cakes, Swedish tea cakes,  Pecan Butterballs,  Sugar Butter Balls, Polvorones,  Snowball Cookies,  Egyptian Feast Cookies, Nut Butter Balls, Norwegian Snowballs, Kourambie, Walnut Delights, Pecan Petites, Holiday Nuggets, and Swedish Heirloom Cookies.

Ingredients:

– 1 cup unsalted butter, softened – 1 1/2 cups powdered sugar, divided – 1 tsp vanilla extract – 2 1/4 cups all purpose flour – 1/2 tsp salt – 3/4 cup pecans, coarsely chopped

In a large bowl or stand mixer, cream butter, powdered sugar, and vanilla extract, until light and creamy.

Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper.

Stir in chopped pecans.

Beat in all purpose flour and salt until just combined.

Place on prepared baking sheets, about 2 inches apart.

Scoop into 1 inch balls.

STEP 7

Bake 10-12 minutes or until set and slightly golden on the edges.

STEP 8

Remove from the oven and cool on sheets for 1-2 minutes or until you can handle them. Place 1 cup of powdered sugar in a bowl. Roll each warm cookie in the sugar, then place on a cooling rack. Once fully cooled, roll in powdered sugar again, 1-2 times. Enjoy!
