Cheese Corn Bake

– butter, divided – all purpose flour – small onion, diced – garlic, minced – milk – sharp cheddar cheese, shredded – corn, drained – salt, pepper to taste – Panko or Ritz crackers

Preheat your oven to 375°F. Prepare a 2 quart baking dish. In a large pan, over medium heat, melt butter, sauté onion and garlic. Season with salt and pepper, cook about 5 minutes.

Whisk in flour and cook about 1 minute, stirring frequently. Slowly add milk until the mixture because creamy and smooth, over medium or medium-low heat, stirring frequently (about 3 minutes).

Add 1 1/2 cups of shredded cheese. Reduce heat to low, stir until cheese is melted. Mix in corn, salt, and pepper, until combined.

Transfer into the prepared baking dish and top with 1/2 cup of shredded cheese.. Melt 2 tablespoons of butter and mix in Panko or crushed Ritz crackers. Spread on top of the cheese.

Bake 15-20 minutes or until golden and bubbly. Allow to rest about 5-10 minutes. Serve hot and enjoy!
