Cinnamon Chip Cookies

– unsalted butter – all purpose flour – eggs – granulated sugar – baking powder – baking soda – salt – vanilla extract – cinnamon chips – cream of tartar – granulated sugar – ground cinnamon

– Prepare baking sheets with baking mats or parchment paper. In a stand mixer or electric mixer, cream butter and sugar, until creamy and fluffy (about 2-3 minutes).

Beat in eggs and vanilla extract. Scrape down the sides of the bowl, as needed.

In a bowl, whisk dry ingredients (flour, baking soda, baking powder, salt, cream of tartar). Mix into the wet ingredients, until no dry flour, but do not overmix.

Stir in cinnamon chips. Cover and chill dough in the refrigerator at least 30 minutes.

Preheat oven to 350 degrees.

In a small bowl, stir 1/4 cup granulated sugar and 1 tsp ground cinnamon, for rolling cookies. Using a cookie scoop or your hands, shape the chilled dough into 1 to 1.5-inch balls. Roll in the cinnamon sugar.

Place cookie balls about 2 inches apart on prepared baking sheets. Bake 12-14 minutes.

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Transfer onto wire racks to cool. Enjoy!
