– 3 eggs – 1 cup granulated sugar – 1/2 cup buttermilk – 1/2 cup sour cream or Greek yogurt) – 1/2 cup canola oil – 2 tbsp lemon zest – 1 1/2 cups all purpose flour – 1 1/2 tsp baking powder – 1/2 tsp salt – 2 tbsp lemon extract – 1/4 cup lemon juice – 3 tbsp powdered sugar – 1 1/2 cups powdered sugar – 3 tbsp unsalted butter, softened – 2 tbsp lemon juice – 2 tsp lemon extract – 1 tbsp heavy cream or milk
Using a fork or whisk, combine softened butter with powdered sugar until smooth. Add lemon juice, milk or heavy cream and lemon extract until well incorporated. Spread or pour over the cooled lemon bread. If you like a thicker icing, add powdered sugar or if you like a thinner icing, add more lemon juice or milk/cream to get your desired consistency.
Allow icing to dry, then cut and serve!.
