Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with nonstick cooking spray or line it with parchment paper, leaving an overhang on the sides of the pan for easy removal. In a large mixing bowl with an electric mixer or stand mixer bowl, mix butter, brown sugar, and granulated sugar for 2-3 minutes.
Add eggs and vanilla extract into the butter mixture. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the butterscotch chips
Spread evenly into your prepared pan and sprinkle the top with 1/2 - 1 cups of extra butterscotch morsels. Bake in the preheated oven for 25-35 minutes, or until the edges are set and golden brown
Remove from the oven and allow the blondies to cool completely in the pan on a wire rack. These butterscotch blondies are delicious on their own or with a scoop of vanilla ice cream for an extra special treat.
