Crumb Topping

– 3 ripe bananas, mashed – 1 1/2 cups all purpose flour – 1 tsp baking powder – 1 tsp baking soda – 1/2 tsp salt – 3/4 cup granulated sugar – 1 egg – 1 tsp ground cinnamon – 1 tsp vanilla extract – 1/3 cup vegetable or canola oil – 1/2 cup chopped walnuts

Preheat oven to 350 degrees. Prepare a muffin pan with nonstick spray or muffin liners.

In a small bowl, combine the topping ingredients: brown sugar, all purpose flour, and ground cinnamon. Mix in room temperature butter until crumbly. Set aside.

Using a medium bowl, whisk all purpose flour, baking soda, baking powder, salt, and ground cinnamon.

In a large bowl, mix mashed bananas, egg, granulated sugar, vanilla extract, and oil until combined well.

Add dry ingredients to wet ingredients until just combined.

Fold in chopped walnuts.

Pour batter into prepared muffin pan. You can use nonstick spray in a 1/4 cup measuring cup, then scoop batter and pour into each cup or use a spoon to fill them 3/4 full.

Sprinkle crumble mixture over the top of each muffin.

Bake 25-28 minutes or until a toothpick in the center comes out clean. Rest 5-10 minutes in the pan, then remove to a baking rack. Enjoy!
