Jelly Bars

Peanut butter and jelly bars are a popular treat for children and adults alike and are often served as a snack or dessert. They are a simple and easy-to-make recipe that can be enjoyed at any time of the day.

– 1 cup (2 sticks) unsalted butter, softened – 1 cup granulated sugar – 1 cup brown sugar, packed – 2 eggs – 1 tsp vanilla extract – 1 cup crunchy peanut butter – 1 cup creamy peanut butter – 3 cups all purpose flour – 1 tsp baking powder – 1 1/2 tsp salt – 1 1/2 cups preserves/jam – 1/2 cup salted peanuts

Preheat oven to 375 degrees. Prepare a 9x13" baking dish.

In a large bowl or stand mixer, combine softened butter, peanut butter, brown sugar, and granulated sugar on medium speed until well blended.

Beat in eggs and vanilla extract.

Add all purpose flour, baking powder, and salt and mix.

Spread 2/3 of the mixture into the prepared baking dish.

Layer jam/preserves evenly over the top.

Crumble the remaining dough on top in small clumps.

Sprinkle peanuts over the top. Bake 40-45 minutes or until the edges are golden brown. Cool and enjoy!
