PUMPKIN EARTHQUAKE CAKE

Pumpkin Earthquake  Cake  is spice cake swirled  with a creamy cheesecake mixture  and chocolate chips placed on top.  Fall is the perfect time  to make this simple, delicious cake.

Pumpkin Cake– 1 box spice cake mix – 3 eggs – 1 cup pure pumpkin puree – 3/4 cup water – 1/2 cup vegetable or canola oil – 1/3 cup granulated sugar – 2 tsp pumpkin pie spice

Pumpkin Cake

Ingredients:

– 8 oz cream cheese, softened – 1/2 cup (1 stick) butter, melted – 3 cups powdered sugar – 1/2 cup chocolate chips (milk, semi-sweet, white or butterscotch)

Cream Cheese Filling

Ingredients:

1. In large bowl, combine cake mix, eggs, water, oil, sugar and pumpkin pie spice using a hand mixer or whisk.

Preheat oven to 350 degrees. Prepare a 9×13″ baking pan with nonstick spray.

Pour batter into prepared baking pan, spreading evenly.

Step 3

Add softened cream cheese to butter and beat until smooth.

Step 5

In microwave safe bowl, melt 1 stick of unsalted butter for 30 seconds, then increments of 10 seconds until fully melted.

Step 4

Place dollops of cream cheese mixture over the top of cake batter.

Step 7

Pour in powdered sugar and mix until well incorporated.

Step 6

Sprinkle chocolate chips over the top.

Step 9

Using a knife, skewer or toothpick, gently swirl the cream cheese with the cake batter.

Step 8

Place in oven and bake 35-45 minutes, until toothpick in the center tests clean. Cool completely and keep refrigerated once cool. Slice and enjoy!
