Raspberry Crumble Cookies (Costco Copycat)

Raspberry Crumble Cookies are melt-in-your-mouth delicious! A shortbread cookie filled with delicious raspberry jam and topped with a sweet and buttery crumble. For breakfast, dessert, or a snack, serve these Costco copycat cookies with a cup of coffee or tea.

– 1 cup (2 sticks) unsalted butter, softened – 1/4 cup granulated sugar – 1/3 cup powdered sugar – 1 tsp vanilla extract – 1 tsp almond extract – 2 1/4 cups all-purpose flour – 1/4 tsp salt – 1/2 cup raspberry preserves/jam

Preheat oven to 350 degrees Fahrenheit . Prepare a jumbo muffin pan with nonstick spray.

In a large bowl or stand mixer, combine softened butter, granulated sugar, powdered sugar, vanilla extract, almond extract, for about 1-2 minutes.

Add flour, salt, and mix until just combined. The dough should still be crumbly and not smooth.

Scoop 1/4 cup of dough into each muffin cup.

Using the bottom of a small glass, press into the bottom and form a small well in the center.

Spoon 1/2-1 tablespoon of preserves into the middle of each cookie.

Sprinkle the top with 1 tablespoon of remaining dough. Bake 18-22 minutes or until the tops start to golden.

Cool completely. Use a knife to run around the edges of each cookie, then pop out of the pan. Place on a cooling rack. Sprinkle the tops with powdered sugar. Enjoy!
