Whole Wheat Bran Muffins

1. Preheat your oven to 425°F. Line a muffin tin with paper liners or  nonstick spray. 2. In a large bowl, combine the wheat bran, whole wheat flour, baking soda, baking powder, salt, and cinnamon.

3. Whisk together honey, egg, milk, applesauce, yogurt, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be lumpy.

4. Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.

5. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake for 5 minutes at 425°F. 6. Lower the temperature to 350°F and continue baking for 14-16 minutes.
