Zucchini Bread with Applesauce

– 3 cups all purpose flour – 1 tsp salt – 1 tsp baking soda – 1 tsp baking powder – 1 tbsp ground cinnamon – 3 eggs – 1/2 cup oil (canola or vegetable) – 1/2 cup applesauce – 1 cup granulated sugar – 1 cup brown sugar – 3 tsp vanilla extract – 2 cups grated zucchini – 1 cup chopped walnuts – 1 cup chocolate chips

Preheat oven to 325 degrees. Spray 2 8x4" bread pans with nonstick spray or lay parchment paper in the pan to easily remove the bread.

In a medium bowl, whisk flour, salt, baking soda, baking powder and cinnamon.

In a large bowl, beat eggs, oil, applesauce, vanilla extract, granulated sugar and brown sugar until smooth.

Add dry ingredients to wet ingredients and beat until flour is well incorporated.

Stir in shredded zucchini, and any add ins you like, such as chopped nuts, chocolate chips, raisins, dried cranberries.

Pour half of the batter into each prepared bread pan.

Bake 50-70 minutes or until a toothpick in the center comes out clean. Cool 20 minutes in the bread pan, then cool on a wire rack until ready to eat. Slice and enjoy!
