Do I need to peel the zucchini before grating?

No, you do not need to peel the zucchini. The skin is thin and softens during baking, adding texture and nutrients to the bread.

Can I make muffins with this recipe?

Yes, you can use the same batter to make zucchini muffins. Pour the batter into greased or lined muffin tins, filling each cup about ⅔ full. Bake at 350°F (175°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

How do I prevent the zucchini bread from being soggy?

To prevent sogginess, make sure to squeeze out as much moisture as possible from the grated zucchini before adding it to the batter. Additionally, do not overbake the bread, as this can cause it to become dry on the edges and soggy in the middle.

Top Tips

  • This recipe makes 2 loaves of zucchini bread.
  • I like to use half oil and half applesauce, but you can substitute for all oil or all applesauce.
  • You can add in chocolate chips (1 cup), raisins/dried cranberries (½ cup) or walnuts/pecans (1 cup, chopped).
  • To get shredded zucchini, you can use a box grater or a food processor. I used a food processer with medium shred.
  • You do not need to dry the moisture from the zucchini.
  • To store, place bread in an airtight container on the counter for 2-3 days.

How to make Zucchini Bread from scratch

  1. Preheat oven to 325 degrees. Spray 2 8x4" bread pans with nonstick spray or lay parchment paper in the pan to easily remove the bread.
  2. In a medium bowl, whisk flour, salt, baking soda, baking powder and cinnamon.

  3. In a large bowl, beat eggs, oil, applesauce, vanilla extract, granulated sugar and brown sugar until smooth.

  5. Stir in shredded zucchini, and any add ins you like, such as chopped nuts, chocolate chips, raisins, dried cranberries.
