Breakfast Hash Brown Casserole

– 1 pound ground breakfast sausage – 8 eggs – 20 oz shredded hash browns, thawed – 1/2 cup onion, finely diced – 1 red bell pepper, diced – 2 cups shredded cheese (mexican, colby, or cheddar) – 1 1/3 cups milk – 1/2 to 1 tsp salt – 1/2 tsp black pepper – 1/4 tsp garlic powder – 1/4 tsp onion powder

Preheat your oven to 375°F. Spray a 9x13" baking dish. Cook sausage until no longer pink, drain. 

In a large bowl, whisk together the eggs, milk, salt, black pepper, onion powder, and garlic powder until well combined.

Spread the thawed hash browns evenly in the greased baking dish. Layer the cooked sausage on top.

Spread diced bell pepper and chopped onion over the sausage.

Sprinkle 1/2 cup of cheese over the top.

Pour the egg mixture over the ingredients in the baking dish, ensuring it is evenly distributed. Gently press down on the casserole with a spatula to ensure everything is submerged in the egg mixture.

Evenly add the rest of the shredded cheese (1 1/2 cups) on top. Bake in the preheated oven for 50-65 minutes, or until the top is golden brown and the center is set. Remove the casserole from the oven and let it cool for a few minutes before serving. Slice into portions and serve warm.
