Easy Jiffy Tamale Pie Casserole

Jiffy Tamale Pie Casserole brings together the essence of classic tamale pie with the convenience of using Jiffy Corn Muffin Mix, making it a go-to favorite for busy weeknights or cozy family gatherings.

Preheat your oven to 375°F. Prepare a 9x13-inch baking dish with nonstick spray.  In a large skillet, cook the ground beef until browned and drain any grease. Add diced onion to the skillet with the cooked meat. Cook for 2-3 minutes until the onions are translucent. Season with salt and pepper.

Add taco seasoning, red enchilada sauce, green chiles. Stir in 1/2 cup of sour cream. Spread ground beef mixture into the prepared casserole dish. Sprinkle with 2 cups of cheddar cheese.

In a large bowl, combine two boxes of Jiffy mix, can of cream corn, 1 egg, 1/4 cup oil, 1/2 cup sour cream, and 1/3 cup milk.

Pour cornbread mixture over top of the meat and cheese, spreading in an even layer.

Bake in preheated oven for 35-45 minutes or until cornbread is golden brown and a toothpick in the cornbread layer comes out clean. Rest 5-10 minutes. Serve hot and enjoy!
