Rolo Stuffed Cookies

A rich chocolate cookie with a sweet caramel center, Chocolate Rolo Stuffed Cookies have the perfect amount of surprise caramel on the inside!

– 1 cup (2 sticks) unsalted butter, softened – 1 cup granulated sugar – 1 cup brown sugar, packed – 2 eggs – 2 tsp vanilla extract – 2 1/4 cups all purpose flour – 3/4 cup cocoa powder – 1 tsp baking soda – 1/2 tsp salt – Rolo candy – granulated sugar to roll

Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper or silicone baking mat.

In a medium bowl, whisk all purpose flour, cocoa powder, baking soda, and salt. Set aside.

In a large bowl or stand mixer, cream softened butter, brown sugar, and granulated sugar until smooth, about 3 minutes.

Add eggs and vanilla extract, mixing until well combined.

Step 5:

Add dry ingredients to the wet ingredients and mix until just combined, no dry flour.

Step 6:

Scoop cookie dough into tablespoon sized dough balls. Place 1 Rolo candy into the center of the dough.

Wrap the dough around the Rolo. Be sure to cover the entire candy, then roll into a ball.

Place 1/2 cup of granulated sugar into a small bowl. Roll each cookie ball into the sugar.

Step 9:

Place onto prepared baking sheets. Bake 8-10 minutes. Do not overbake.

Step 10:

Remove from oven, cool on baking sheets about 5 minutes, then remove to cooling racks. Enjoy!
