Soft and Chewy Smores Bars are basically the lazy genius version of a campfire s’more—no fire, no sticky fingers, just pure gooey goodness in every bite. Picture a buttery graham cracker crust with a melty layer of chocolate and perfect marshmallow fluff, all baked into a bar you can grab without getting marshmallow all over your face (okay, maybe just a little).

Making smores bars with marshmallow fluff is basically the ultimate hack for maximum gooeyness. No awkward marshmallow placement, no worrying about uneven toasting—just a thick, dreamy layer of fluff that melts into the chocolate like a sweet, sticky cloud. Spreading it can get a little messy (okay, a lot messy), but that’s just part of the fun. It’s the lazy (yet genius) way to enjoy s’mores, and I’m here for it every time!

What’s the best way to store smores bars?

Keep them in an airtight container to prevent them from getting too dry. You can also freeze them for up to a month if you want to save some for later—just let them thaw before digging in!

How do I keep the fluff from sticking to everything?

Marshmallow fluff is famously sticky! To make spreading easier, lightly grease your spoon or spatula with cooking spray or dip it in warm water.

How do I cut the bars without making a sticky mess?

  • Spread Marshmallow Fluff the Easy Way - Fluff is sticky! Spray your spoon or spatula with nonstick spray, or use a buttered knife to spread it without a fight.
  • Use a Greased Knife for Clean Cuts- Run a sharp knife under hot water or spray it with nonstick spray to cut through the fluff without dragging.
  • Chill for firmer bars – If you prefer a more structured bar, pop them in the fridge for 20-30 minutes before cutting.
  • Store Them Right - Keep bars in an airtight container at room temp for a couple of days or refrigerate if it’s warm out. Warm them up for a few seconds in the microwave if they firm up too much!
  • For longer storage, freeze the bars wrapped in parchment paper and placed in a freezer-safe bag or container. Simply thaw them in the refrigerator before serving.

How to make Smores Bars

  1. Preheat your oven to 350°F (175°C). Prepare a 9x13" baking pan with nonstick spray.
  2. In a medium bowl, combine flour, graham cracker crumbs, salt, and baking powder. In a large bowl or stand mixer bowl, mix softened butter and brown sugar for 2-3 minutes. Beat in eggs and vanilla extract until combined well. Spread half of the dough into the prepared pan evenly.


  3. Gently spread marshmallow fluff on top of the crust. Dip a spoon into hot water to help spread the fluff.


  4. Sprinkle chocolate chips over the marshmallow fluff.


  5. Using the other half of the dough, flatten into small pieces and place over the top of the chocolate chips layer.


  6. Bake 30-33 minutes in a preheated oven, until golden brown. Optional: Place pieces of chocolate bars on top when they come out of the oven. Cool, slice, enjoy!
