Soft and Chewy S’mores Bars are basically the lazy genius version of a campfire s’more—no fire, no sticky fingers, just pure gooey goodness in every bite.
Preheat your oven to 350°F (175°C). Prepare a 9x13" baking pan with nonstick spray.
In a medium bowl, combine flour, graham cracker crumbs, salt, and baking powder.
In a large bowl or stand mixer bowl, mix softened butter and brown sugar for 2-3 minutes.
Beat in eggs and vanilla extract until combined well. Spread half of the dough into the prepared pan evenly.
Gently spread marshmallow fluff on top of the crust. Dip a spoon into hot water to help spread the fluff.
Sprinkle chocolate chips over the marshmallow fluff.
Using the other half of the dough, flatten into small pieces and place over the top of the chocolate chips layer.
Bake 30-33 minutes in a preheated oven, until golden brown. Optional: Place pieces of chocolate bars on top when they come out of the oven. Cool, slice, enjoy!
