I’ll admit it—I grab that big pack of Costco tortellini like it’s a prize every time I’m there. It’s my secret weapon for last-minute meals, and turning it into a pasta salad is my favorite move. Just boil it up, toss with some veggies, dressing, and whatever bits and pieces are in the fridge (Costco salami, anyone?), and boom—instant potluck hero. It’s the kind of dish that tastes like summer and convenience had a delicious baby.

  • 16 oz cheese tortellini
  • 1 cup cherry or grape tomatoes, halved
  • ½ cup black olives, sliced
  • ½ cup red onion, diced
  • 1 bell pepper, diced
  • 1 cup mozzarella pearls
  • 8 oz salami, cubed
  • 1 cup Italian salad dressing
  • salt, pepper to taste
