Lunch Lady Brownies are a chocolate treat that bring back memories of the school cafeteria, especially school lunch dessert. With their gooey texture, intense chocolate flavor, they are a classic recipe that is a favorite for everyone.Β
Preheat oven to 350 degrees. Prepare a 9x13" baking pan with nonstick cooking spray or parchment paper.
In a large bowl with a hand mixer or in a stand mixer bowl, combine melted butter, cocoa powder, and granulated sugar until mixed well.
Add all purpose flour, eggs, and vanilla extract, mixing until just combined. Be careful not to overmix. If using any nuts, fold them into the batter.
Spread the brownie batter evenly into the prepared baking dish. Bake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay, not wet batter). Remove from oven and allow to cool about 10 minutes, while making the frosting.
Chocolate frosting
In a large bowl, add powdered sugar and cocoa powder. Whisk a little to get rid of any lumps.
Pour milk into the bowl, along with softened butter and mix until smooth. If it is too thick, add in a little more milk until you get the desired consistency.
Spread frosting over the top of the warm brownies. Slice and enjoy these fudgy brownies!
