Preheat oven to 375 degrees. Prepare your 9x13" pan with nonstick spray.
Slice apples as evenly as you can, so you don't have some slices cooked more or less than others. Place apples in a large bowl and mix in cinnamon, brown sugar, and flour until evenly coated.
Crumble topping
Gather topping ingredients.
In a large bowl, mix old-fashioned oats, flour, cinnamon, and brown sugar. Use the stick of butter, right out of the refrigerator, so it is cold. Using a pastry cutter or your hands, mix, until crumbly.
Spread apples into the prepared baking dish.
Sprinkle crumble topping over the apples.
Bake in 375 degree oven for 30-40 minutes or until juices are bubbling and topping is golden brown. Allow to cook at least 5 minutes, then serve with ice cream, caramel sauce, or just plain. Cover and store in refrigerator up to 5 days.
