Birthday Cake Cookies are delicious and fun, whether you are celebrating a birthday or not. They’re prepared from scratch and loaded with sprinkles, plus white chocolate chips.
In a large bowl or stand mixer, cream butter, brown sugar, granulated sugar, about 3 minutes on medium high.
Add vanilla extract, almond extract and eggs, beating 1-2 minutes until light and fluffy.
In a medium bowl, whisk together dry ingredients; flour, baking soda, salt. Add to the wet ingredients until just combined (no dry flour).
Fold in white chocolate chips and sprinkles.
Cover dough and refrigerate for 30 minutes to 1 hour.
Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper. Using a medium cookie scoop, place cookie dough onto prepared pan at least 2 inches apart.
Bake 10-12 minutes and lightly browned. Rest 5 minutes on cookie sheet, then remove and place on wire racks to cool the rest of the way. Enjoy!
