Butterscotch Blondies are soft, chewy and full of butterscotch flavor in every bite. The butterscotch chips and brown sugar combo make these chewy and delicious!
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with nonstick cooking spray or line it with parchment paper, leaving an overhang on the sides of the pan for easy removal.
In a large mixing bowl with an electric mixer or stand mixer bowl, combine butter, brown sugar, and granulated sugar for 2-3 minutes.
Add eggs and vanilla extract into butter mixture.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in the butterscotch chips until evenly distributed throughout the batter.
Spread evenly into the prepared pan and sprinkle the top with ½ - 1 cup of butterscotch morsels.
Bake in preheated oven for 25-35 minutes, or until the edges are set and golden brown, and a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).
