Preheat oven to 375 degrees. Prepare a 9x13" baking dish with nonstick spray or parchment paper.
In a large mixing bowl or bowl of an electric mixer, combine softened butter, brown sugar, and granulated sugar on medium speed until well blended. Scrape down the sides, as needed.
Beat in eggs, peanut butter, and vanilla extract.
Add all purpose flour, baking powder, and salt and mix until no dry flour.
Spread ⅔ of the peanut butter mixture into the bottom of the pan.
Layer jam/preserves evenly over the top.
Crumble the remaining dough on top of the jam layer in small clumps.
Sprinkle peanuts over the top, if you are using them. Bake 40-45 minutes or until the edges are golden brown. Cool and enjoy!
