In a large pot, cook the ground beef, minced garlic, and diced onion over medium heat until meat is fully browned and onion is translucent. Drain any excess grease.
Mix in both cans of Rotel, beef broth, chili powder, salt, cumin, oregano, dry ranch, black pepper, and paprika.
Add drained cans of beans and corn,. Stir, bring to a boil, then reduce heat and let simmer for 20-30 minutes.
Stir in lime juice and chopped cilantro, if using. Ladle into bowls and load up with your favorite toppings. Enjoy!
