Apple Dapple Cake
has a ton of apple chunks along with a buttery, brown sugar glaze on top. It would make the perfect cake for Thanksgiving or any Autumn day!

apples, peeled and diced (about 1 ¾ pounds)

granulated sugar

brown sugar, packed
1
cup
walnuts or pecans
1

canola or vegetable oil
½
cup
applesauce
3
eggs
2
teaspoon
vanilla extract

all purpose flour

teaspoon
baking soda
½
teaspoon
salt

teaspoon
ground cinnamon
Sugar Glaze
⅓
cup
granulated sugar
¼
cup
brown sugar, packed
¼ cup
(half of a stick)
unsalted butter
¼
cup
heavy cream or milk
½
teaspoon
vanilla extract
Instructions
Apple Cake
Preheat oven to 350 degrees. Prepare a 9×13″ baking pan with nonstick spray.
In a medium bowl, sift or whisk flour, baking soda, salt and cinnamon. Set aside.
In a large bowl or stand mixer, combine oil, granulated sugar, brown sugar and applesauce until combined.
Add eggs, one at a time and mix well after each addition, then add vanilla extract. Scrape down sides as needed.
Mix dry ingredients to the wet ingredients on low speed.
Fold nuts into the batter.
Next, gently fold the peeled and diced apples into the mix.
Spread batter into prepared baking dish. Bake 45-55 minutes or until toothpick inserted in the middle comes out clean.
When cake comes out of the oven, use a toothpick or wooden skewer and poke holes all over the cake while it is still hot.
Sugar Glaze
Gather ingredients for the sugar glaze.
Place glaze ingredients into a small saucepan.
Bring glaze to a boil and continuously stir for one minute.
Remove glaze from heat and pour over the top of the hot cake. Serve hot, cold or with ice cream on top. Enjoy!
