Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper or silicone baking mats.
In a large bowl or bowl of a stand mixer bowl, beat butter and oil, about 1 minute on medium speed. Beat in powdered sugar, granulated sugar, egg, and vanilla extract, until well incorporated. Using a rubber spatula, scrape down the sides of the bowl, as needed.
Add flour, salt, baking soda, and open one chai tea bag, pouring in the dry tea. Mix until you see no dry flour, do not overmix. The cookie dough will be soft. Cover and chill for 1 hour so it is easier to handle.
Scoop the dough into 1-2 tablespoon sized balls. Roll into extra granulated sugar or sprinkle sugar on top. Place them on the prepared baking sheet about 2 inches apart. Gently flatten each ball with the bottom of a glass or your hand.
Bake in the preheated oven for 9-10 minutes, or until the edges are lightly golden. The centers should still be soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Eggnog Frosting
In a medium bowl, whisk together the powdered sugar, eggnog or eggnog flavoring, milk, and vanilla extract (if using) until smooth. The icing should be thick but spreadable. Adjust the consistency by adding more powdered sugar or eggnog/milk as needed.
Once the cookies are completely cool, spread or drizzle the eggnog icing over the tops. Allow the icing to set before serving or storing the cookies. This usually takes about 20-30 minutes. Enjoy!
