Preheat your oven to 375°F. Prepare a 9x13-inch baking dish with nonstick spray and set aside.
In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat.
Add diced onion to the skillet with the cooked meat. Cook for 2-3 minutes until the onions are translucent. Season with salt and pepper.
Add taco seasoning, red enchilada sauce, green chiles. Simmer for about 5 minutes.
Stir in ½ cup of sour cream.

In a large bowl, combine two boxes of Jiffy mix, can of cream corn, 1 egg, ¼ cup oil, ½ cup sour cream, and ⅓ cup milk.
