In a medium to large saucepan over medium heat, whisk sugar, flour, milk, and salt.
Add in the egg yolks and whisk often, until thickened, about 15-20 minutes.
Once thickened, remove from heat and whisk or stir in peanut butter, plus vanilla extract.
Combine until smooth and creamy.
Pour pudding into a bowl, cover and place in refrigerator to cool at least one hour. If it is too thick for you, add a little more milk to get the consistency you prefer. Place into bowls, add a little whipped cream or peanuts on top and enjoy!
