This lemon bread is so easy to make and bursting with lemon flavor. It has a sweet lemon glaze on top of the moist breadand is perfect for any time of the day.
Preheat oven to 350 degrees. Prepare your 9x5" bread loaf pan with floured spray or parchment paper.
In a large bowl, whisk flour, salt, and baking powder.
In another bowl, mix sour cream, oil, sugar, lemon juice, lemon zest, eggs, and vanilla.
Combine wet and dry ingredients until just mixed. Do not overmix or the bread may become too dense.
Spread the batter evenly into your prepared pan.
Bake in preheated oven 50-60 minutes, or until golden brown and toothpick comes out clean. Remove and allow to cool about 20 minutes before removing the bread and placing it on a wire rack to continue cooling.
Make the lemon glaze
Make your lemon glaze by whisking lemon juice and powdered sugar.
Pour the glaze over the bread, once it is completely cool, then spread to cover.
Allow to harden for 15-20 minutes and sprinkle more lemon zest on top, if wanted.
