This traditional, delicious Berry Cobbler combines sweet, juicy berries with a buttery, rich biscuit topping. This is best with fresh berries, but if fresh berries aren’t available, you may use frozen berries and still make this cobbler. I love it with vanilla ice cream on top.
8cupsfresh or frozen berries (blackberries, blueberries, raspberries, or chopped strawberries)
¾cupgranulated sugar
1tablespoonlemon juice
2tablespooncornstarch
1teaspoonvanilla extract
Topping
1 ½cupsall purpose flour
⅓cupgranulated sugar
1 ½teaspoonbaking powder
½teaspoonsalt
½ cup(1 stick)unsalted butter
½cupbuttermilk
1tablespoonbuttermilk, 1 tablespoon sugar, to place on top
Instructions
Berry filling
Preheat oven to 375 degrees. Spray a 9×13″ baking dish with nonstick spray.
Place berries in a large bowl and gently mix with granulated sugar, lemon juice, cornstarch and vanilla extract. Set aside for about 10 minutes.
Topping
In a medium bowl, whisk flour, granulated sugar, brown sugar, baking powder and salt.
Using a pastry cutter or two forks, cut the butter into the flour mixture until it is in pea-sized crumbs.
Slowly pour cold buttermilk into the flour mixture, stirring to evenly combine.
Place the berries into the prepared baking dish.
Take small handfuls of dough and flatten it out, then place over the top of the berries. Cover them as much as possible.
Brush the top of the dough with 1 tablespoon of buttermilk.
Sprinkle a tablespoon of granulated sugar over the top of the buttermilk.
Bake in the preheated oven for 45-55 minutes or until golden brown and toothpick inserted into the dough comes out clean. Cool 5-10 minutes before serving. Scoop, place ice cream or whipped cream on top and enjoy!
