Preheat oven to 375 degrees. Line baking sheets with parchment paper or cooking spray.
Whisk your dry ingredients (flour, baking soda, salt) together in a bowl. In a large bowl or stand mixer, combine softened butter with granulated sugar and brown sugar, until light and fluffy (about 3 minutes).
Add your eggs, one at a time, beating well after each addition. Add vanilla extract and beat to combine.
Mix in your dry ingredients and beat until just combined (scrape down sides as needed).
Stir in chocolate chips and caramel bits.
Scoop cookie dough into tablespoons onto the cookie sheets and sprinkle a pinch of salt on top. Bake 10-12 minutes and let cool on baking sheet or cookie racks. Place extra chocolate chips on top when they are just out of the oven, if desired.
