FAQs

What is scalloped corn?

Scalloped corn is a baked casserole dish made with sweet corn, often mixed with eggs, milk, and sometimes cheese, and topped with breadcrumbs or crackers for a crispy finish. It's a comforting side dish, commonly served during holidays and family gatherings.

Is scalloped corn the same as corn pudding?

While both dishes are similar, scalloped corn typically has a breadcrumb or cracker topping that gives it a crunchy texture, whereas corn pudding is usually softer and more custard-like without a topping.

Can I make scalloped corn ahead of time?

Yes! You can prepare the dish, cover it, and refrigerate it for up to 24 hours before baking. When you're ready to serve, just bake it as directed, adding a few extra minutes if it's cold from the fridge.

Can I freeze scalloped corn?

Yes, scalloped corn can be frozen. Allow it to cool completely, then wrap it tightly in plastic wrap and foil. It can be stored in the freezer for up to 3 months. To reheat, thaw in the refrigerator overnight and bake until heated through.

What can I add to scalloped corn for extra flavor?

You can add shredded cheese, diced bell peppers, onions, or even a sprinkle of bacon for extra flavor. Herbs like thyme or parsley also add a fresh touch.

Top Tips

  • Use fresh, frozen, or canned corn kernels, depending on availability. If using canned corn, make sure to drain it well before incorporating it into the dish.
  • Get Creative with Toppings: Try adding crushed Ritz crackers, panko breadcrumbs, or even crumbled bacon for a unique twist. You can also sprinkle some shredded cheese on top for a gooey, cheesy crust.
  • After baking, let the corn sit for a few minutes before serving. This allows it to set and makes it easier to serve.
  • Leftover scalloped corn can be stored in an airtight container in the refrigerator for up to 3 days. Reheat it in the oven or microwave before serving.
