It’s ridiculously easy to make—just throw everything in a pot, let it simmer, and boom, dinner’s ready!

Making taco soup is my kind of cooking—easy, flavorful, and basically impossible to mess up. The best part? I get to throw in whatever toppings I’m in the mood for—cheese, sour cream, crunchy tortilla chips (okay, maybe too many). It’s like making tacos, but without the stress of keeping everything from falling apart in my hands. Plus, my kitchen smells amazing, and I get to cozy up with a bowl of pure comfort.

Absolutely! Brown the ground beef first, then throw everything into the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.

Can I freeze taco soup?

How to make Taco Soup

  1. In a large pot, cook the ground beef, minced garlic, and diced onion over medium heat until meat is fully browned and onion is translucent. Drain any excess grease.


  2. Mix in both cans of Rotel, beef broth, chili powder, salt, cumin, oregano, dry ranch, black pepper, and paprika.


  3. Add drained cans of beans and corn,. Stir, bring to a boil, then reduce heat and let simmer for 20-30 minutes.


  4. Stir in lime juice and chopped cilantro, if using. Ladle into bowls and load up with your favorite toppings. Enjoy!

  • 1 pound ground beef
  • 1 onion, diced
  • 2 teaspoon garlic cloves, minced
  • 2 cans Rotel tomatoes with green chiles
  • 2 cups beef broth
  • 1 can tomato sauce (15 oz)
  • 1 can or frozen corn, drained (15.25 oz)
  • 1 can black beans, drained (15 oz)
  • 1 can pinto beans, drained (16 oz)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • ½ teaspoon pepper
  • 1 package dry ranch (1 oz)
  • ⅓ cup cilantro
  • 1 tablespoon lime juice
