- Preheat oven to 350 degrees Fahrenheit . Prepare a jumbo muffin pan with nonstick spray.
- In a large bowl or stand mixer, combine softened butter, granulated sugar, powdered sugar, vanilla extract, almond extract, for about 1-2 minutes.
- Add flour, salt, and mix until just combined. The dough should still be crumbly and not smooth.
- Scoop ¼ cup of dough into each muffin cup.
- Using the bottom of a small glass, press into the bottom and form a small well in the center.
- Spoon ½-1 tablespoon of preserves into the middle of each cookie.
- Sprinkle the top with 1 tablespoon of remaining dough. Bake 18-22 minutes or until the tops start to golden.
