Raspberry Crumble Cookies are melt-in-your-mouth delicious! A shortbread cookie filled with delicious raspberry jam and topped with a sweet and buttery crumble. For breakfast, dessert, or a snack, serve these Costco copycat cookies with a cup of coffee or tea.

Costco is one of my favorite stores. We have been members for years and shop there at least every two weeks. I learned about the Raspberry Crumble Cookies on a Costco Facebook group and people were going wild for them. The cookies we have gotten were covered in powdered sugar. If you want to leave it off, you can. The cookies are delicious with and without the sprinkling of sugar. Give them a try and let us know what you think in the comments!

Yes, you can freeze these cookies. Place them in a single layer on a baking sheet to freeze, then transfer them to a freezer-safe container or bag. Freeze for up to 2 months. Thaw at room temperature before serving.

Top Tips

  • No jumbo muffin pan? That's okay! Instead of using ¼ cup of cookie dough, use just 2 tablespoons, along with 2 teaspoons of raspberry preserves. Cut the baking time to just 15-18 minutes.
  • Try preserves other than raspberry, such as strawberry, peach, blackberry or apricot.
  • Be careful not to overmix into a smooth dough or you will not get the cookie crumble.
  • Completely cool the cookies before removing them from the muffin pan. They will crumble if not cooled enough.
  • To store, place in an airtight container up to 7 days.

How to make Costco Copycat Raspberry Crumble Cookies

  1. Preheat oven to 350 degrees Fahrenheit . Prepare a jumbo muffin pan with nonstick spray.
  2. In a large bowl or stand mixer, combine softened butter, granulated sugar, powdered sugar, vanilla extract, almond extract, for about 1-2 minutes.

  3. Add flour, salt, and mix until just combined. The dough should still be crumbly and not smooth.

  4. Scoop ¼ cup of dough into each muffin cup.

  5. Using the bottom of a small glass, press into the bottom and form a small well in the center.

  6. Spoon ½-1 tablespoon of preserves into the middle of each cookie.

  7. Sprinkle the top with 1 tablespoon of remaining dough. Bake 18-22 minutes or until the tops start to golden.

  8. Cool completely. Use a knife to run around the edges of each cookie, then pop out of the pan. Place on a cooling rack. Sprinkle the tops with powdered sugar. Enjoy!
