Simple Sausage Quiche Recipe

Simple Sausage Quiche (or bacon) is easy to prepare. It will quickly become a favorite for everyone. Level up your breakfast with a flaky pie crust loaded with eggs, meat, and cheese.

I have been making this recipe since the early days of my marriage. This was almost always on our menu for breakfast or brunch in those days. I experiment so often in the kitchen now that we have not had this in a while. Our sons didn't have it before making it this time. It quickly became a recipe which is requested to have again and I don't mind since it is so yummy and easy to make. Leave a comment and let me know how you like it!

What is breakfast quiche?

Breakfast quiche is a savory pie made with a filling of cooked breakfast meat, eggs, cheese, and milk or cream, baked in a pastry crust. It’s a versatile dish that can be enjoyed for breakfast, brunch, lunch, or dinner.

Can I make the quiche ahead of time?

Yes, you can make the quiche ahead of time. You can either prepare and bake it in advance and reheat it before serving, or you can assemble the quiche, cover it, and refrigerate it overnight before baking it fresh the next day.

Can I freeze sausage quiche?

Yes, sausage quiche freezes well. Bake the quiche and allow it to cool completely. Wrap it tightly in plastic wrap and then in aluminum foil or place it in a freezer-safe container. Freeze for up to 2 months. Thaw in the refrigerator overnight before reheating.

Top Tips

  • Any type of breakfast meat (ham, sausage, bacon, turkey sausage, chicken sausage, turkey bacon) can be used with the recipe or no meat at all.
  • Add in any other veggies you would like, such as peppers, mushrooms, spinach, etc.
  • Use your favorite cheese-cheddar, mozzarella, swiss, colby, monterey jack, pepper jack, etc.
  • I am adding parsley to the egg mixture, which goes to the top of the quiche. You can also top it with tomatoes or green onions.
  • The more vegetables you add, adjust the size of your pie crust. I am using a 9" traditional, but you would want a 9" deep dish for extra veggies or in case of spilling the egg mixture.
  • Store the quiche in an airtight container for up to 3 days.

How to make Quiche with Sausage or Bacon

  1. Preheat oven to 375 degrees. Cook your sausage and onion together; drain well.
  2. In a large bowl, combine, sausage, onion, flour and 2 cups of shredded cheese.

  3. Spread evenly into two unbaked pie shells.

  4. Whisk together eggs, evaporated milk, and parsley (optional).

  5. Pour eggs over the sausage evenly, half into each pie shell. Top each with ½ cup of shredded cheese.

  6. Bake on a sheet pan in 375 degree oven for 35-40 minutes. Test with a toothpick in center coming out clean. Let rest about 10 minutes before cutting. Enjoy!

  • 1 lb. 16 oz. pork sausage
  • 1 cup onion, chopped
  • 3 cups shredded cheese
  • 1 can (12 oz) evaporated milk
  • 4 eggs
  • 4 tbsp. all purpose flour
  • 2 pie shells (traditional or deep dish)
  • 3 teaspoon parsley (optional)
  • salt, pepper to taste

Instructions
 

  • Preheat oven to 375 degrees. Cook your sausage and onion together; drain well.
  • In a large bowl, combine, sausage, onion, flour and 2 cups of shredded cheese.
