- The best bread to use is stale/day old bread, which will soak up the egg mixture like a sponge. We set ours out the night before, on a wire cookie rack, over a sheet pan to allow the bread to dry out.
- There are many toppings you could use with French toast, such as maple syrup, butter, berries (strawberries, blueberries, raspberries, blackberries), Nutella, peanut butter, bananas, powdered sugar, chocolate chips, cinnamon, whipped cream, to name a few.
How to make Pumpkin Spiced French Toast
- Lay the bread on a cooling rack or baking sheet overnight. More of the bread's surface area exposed to air, the more evenly and quicker it will dry out.
- In a shallow dish, whisk eggs, milk, pumpkin puree, cinnamon, brown sugar, salt, and vanilla extract until smooth.
- Preheat oven to 375 degrees. Place each slice of bread into the egg mixture, about 20 seconds per side. If you did not set bread out overnight, only dip for a few seconds per side. Place on a wire rack, on top of a sheet pan or cooking sheet. Add a piece of parchment under the wire rack to catch egg drippings.
- Melt butter in a skillet over medium heat. Add the bread slices to the skillet and cook for 2-3 minutes per side, or until golden brown and crispy.
- Once all slices are golden brown, place on a cooling rack or cookie sheet. Bake in preheated oven for 10 minutes.
- Serve immediately with maple syrup, whipped cream, and fresh fruit, if desired.
