We've got the Best Kale Salad recipe for you. Not only is it simple and easy to make, but it also combines the freshness of kale with a tangy yet smooth olive oil dressing that will leave you craving for more.

I am thrilled to share one of our personal favorite kale salad recipes! The crispness of the fresh kale perfectly compliment the dried cranberries which bring the tang, plus parmesan cheese for added creaminess. The blend of flavors in this salad is further enhanced by a simple olive oil salad dressing with basil. This is such as great salad to eat at any time of the day and would be perfect to share with everyone!

Kale Salad

  • 4 cups fresh kale, cleaned and chopped
  • 1 cup dried cranberries
  • 1 cup parmesan cheese
  • ¼ cup sunflower seeds
  • ¼ cup red onion, diced

Olive Oil Dijon Dressing

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon minced garlic
  • ½ teaspoon dried basil or oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
