Southern Cornbread casserole is the ultimate comfort food using simple ingredients. It's a great side dish that resembles a cross between a sweet, buttery cornbread muffin and a creamy, rich soufflé. We are making this extra easy by using a box of Jiffy corn muffin mix (which is also inexpensive), adding a few ingredients to it and placing it in the oven.

Top Tips

  • Some suggestions to add into this casserole would be crumpled bacon, diced onion, jalapeno, diced green chilis, or sprinkle shredded cheddar cheese on top.
  • If you cannot find Jiffy corn muffin mix, you can use other boxed cornbread mixes.
  • Make this up to 2 days ahead. Mix the ingredients as listed, but cover and place into the refrigerator. When ready to bake, set it on the counter at least 30 minutes to warm a little. You may need to add a few more minutes to the baking time.
  • Cook this in a slow cooker for 2 ½ hours on high or 4 hours on low.
  • If you have leftovers, place them in an airtight container or covered tightly with plastic wrap, in the refrigerator for 3-4 days.

How to make Old Fashioned Easy Corn Casserole

  1. Preheat oven to 350 degrees. Prepare a 9x13" casserole dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the cream-style corn, whole kernel corn, Jiffy corn muffin mix, sour cream, melted butter, and eggs.

  3. Pour the mixture into the prepared baking dish and spread it evenly.

  4. Bake for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. Let it cool for a few minutes before serving. Scoop and enjoy!

  • 1 8.5 oz. box Jiffy Corn Muffin Mix
  • 3 eggs
  • ½ cup (1 stick), unsalted butter
  • 1 cup sour cream
  • 1 can (14.75 oz) creamed corn
  • 1 can (15 oz) whole kernel corn, drained

Instructions
 

  • Preheat oven to 350 degrees. Prepare a 9x13" baking dish with nonstick spray.
