  • Shredded chicken is used in this recipe but you can use diced chicken or rotisserie chicken.
  • One of the best ways to cook chicken for shredding, is in the Instant Pot. Place it in the Instant Pot, cover with 1 cup of chicken stock and any seasonings you like. Close the top and touch the Poultry setting. Once it beeps, shred the chicken with your hands, tongs, forks, anything that works for you.
  • If you have leftovers, place them in an airtight container in the refrigerator for 3-4 days.

How to make Chicken and Stuffing Casserole

  1. Prepare a 9x13" baking dish with nonstick spray. Preheat oven to 375 degrees.
  2. Spread cooked chicken on bottom of the prepared dish evenly. Sprinkle with salt and pepper to taste.

  3. In a small bowl, whisk 2 cream of chicken soup cans with milk until smooth.

          Yes, crunchy topping is correct. However, you can make the stuffing according to the box and add it to the top, if you prefer it to be fluffier.

        How long to cook chicken to shred before assembling

          Hi, Leroy! You can cook chicken to shred in many different ways. Place boneless chicken breasts in a pot on the stovetop, cover with chicken broth, cover with a lid, boil 15-20, or until it is no longer pink. Poke it with a fork and juices will run clear or use a thermostat and the internal temperature should be 165 degrees F.
          You can place it into an Instapot or pressure cooker. You could even cook the chicken in a crockpot, until it is cooked through, usually 2-4 hours on high. As a time saver, you could buy precooked chicken at the grocery store or a rotisserie chicken.
