The addition of gooey pepper jack cheese and flavorful stuffing your plain old chicken is taken to a whole new level. These are simple comfort food meals that your family will love!

How to make Pepper Jack Chicken Casserole

  1. Preheat your oven to 350°F (175°C).
  2. Melt 4 tablespoons of butter and pour into a 9x13 inch casserole dish. Place chicken breasts on top. Season with salt and pepper.

  3. Layer 8-12 cheese slices on top of the chicken.

  4. In a small bowl, whisk cream of chicken soup with milk, until smooth. Pour soup mix over the chicken evenly.

  5. Sprinkle dry stuffing mix on top of soup evenly. Melt 4 tablespoons of butter and pour over the top. Bake 45-60 minutes in the preheated oven, until chicken is cooked and the casserole is bubbling.

  6. To confirm that your chicken is cooked all the way through, insert a meat thermometer into the thickest part of the chicken. The internal temperature should reach 165°F (74°C). If you don't have a thermometer, you can slice into the thickest piece to check for any pinkness.  Serve hot and enjoy!

  • 4 chicken breasts, trimmed
  • 1 10.5 oz. can cream of chicken soup
  • ½ cup (1 stick) unsalted butter, divided
  • ½ cup milk
  • 1 box (6 oz) stuffing mix
  • 8-12 slices pepper jack cheese
  • salt, pepper to taste

  • Preheat your oven to 350°F (175°C).
  • Melt 4 tablespoons of butter and pour into a 9x13" casserole dish. Layer raw chicken breasts on top. Season with salt and pepper.
  • Layer 8-12 slices of cheese on top of the chicken.
